Gut Healing Soup

This recipe is one of my favorites by Taylor Dukes. It reminds me of split pea soup. Our gut health plays a significant role in our well-being. A healthy gut contributes to a strong immune system, heart health, brain health, improved mood, healthy sleep, and effective digestion. Ingredients

The Gut Healing Soup incorporates simple yet highly beneficial ingredients. Here's what you'll need:

  • 2 Tbspn Olive Oil

  • 2 Tspn Sea Salt

  • 1 small onion (minced preferable)

  • 2 Garlic Cloves

  • 2 Broccoli Crowns

  • 3 Zucchinis

  • 3.5 Cups of Broth or Water

  • Juice of a Lemon

  • 1 Tbspn Nutritional Yeast

  • 1/2 Cup Coconut Milk

Each of these ingredients contributes to the soup's healing properties. Olive oil is packed with healthy fats, garlic and onion have antibacterial properties, broccoli and zucchinis are high in fiber, and the coconut milk adds a creamy texture while providing additional health benefits.

Now, let's dive into the cooking process.

  1. In a large pot, add olive oil and cook the onion, salt, and garlic for about 5 mins until fragrant. The aroma of these ingredients cooking together kick-starts the flavour journey of this soup.

  2. Next, chop up the broccoli and zucchini then add them to the pot with your chosen broth or water. Both broccoli and zucchini are excellent sources of vitamins and minerals, making your soup a nutrient powerhouse.

  3. Once it reaches a boil, lower the heat to medium, cover the pot, and let it cook for 25 mins. This process allows the flavors to meld together and the vegetables to soften, enhancing the soup's texture and taste.

  4. After that, add the lemon juice, coconut milk, and nutritional yeast and let it cook for another 5 mins. The lemon juice adds a tangy kick, the coconut milk contributes creaminess, and the nutritional yeast gives a cheesy flavor without any dairy.

  5. Finally, blend the soup until smooth. This creates a silky, creamy texture that makes this healing soup a delight to savor.
